Verum Santa Lucia is the union of cooked grape must with wine vinegar,
together to form a black and thick condiment with a strong and pleasant
taste. There are many uses of this condiment, from dips of raw vegetables
to cheeses and cured meats as an aperitif. Ideal with gravy and sauces for
lean roasts, cut meat, stews and stewed red meat.
